Buttermilk Drop Biscuits

As a cat, I’m an expert in making biscuits. So today I woke up, made these, and went back to bed. I like them hot, and served with buttery spread and strawberry jam. I then played with a piece of straw on the ground. I showed that straw who’s boss!

These biscuits are flakey and buttery, and are the perfect base butter or jam. When hot, they’re on par with any fresh-baked bread, and you don’t have to wait for yeast to rise!

Ingredients
  

  • 1/4 cup cold butter
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 3 tablespoons plain nonfat Greek yogurt
  • 1 teaspoon honey (optional) more for drizzle

Instructions
 

  • Preheat your oven to 450°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  • Cut 1/4 cup cold butter into 1/2 inch cubes, and put in fridge to keep cold.
  • In a medium bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  • In a small bowl or a measuring cup, stir together 1 cup buttermilk, 3 tablespoons plain nonfat Greek yogurt, and 1 teaspoon honey.
  • Add the cold butter cubes into the flour mixture, scattering them evenly so they don't stick together. Use a large fork or a pastry blender to mash the butter into the flour mixture. The butter pieces should be the size of beans or peas.
  • Add the buttermilk mixture to the flour mixture, and stir until the flour mixture completely disappears. Do not overmix.
  • Use a large spoon or 3 tbsp-ice cream scoop to drop approximately 3 tbsp-sized scoops of dough onto the prepared baking sheet. 12 biscuits should fit on the sheet. I do not recommend using a measuring cup to do this, since the dough is very sticky and can be hard to get off the measuring cup.
  • (Optional) Drizzle the top of each biscuit with honey for a sweet twist!
  • Place baking sheet on the center rack of the preheated oven. Bake for 12-14 minutes, until the edges of the biscuits turn golden-brown.
  • Serve immediately, plain or with your favorite toppings. I love my hot biscuits with butter and strawberry jam!
