Currant Prosciutto Brie Toasties

These are SO GOOD–they’re like a dinner and dessert combined. The cheese melts in your mouth, and I just feel old-money eating these. Never has baguette been treated so right.

Currant Prosciutto Brie Toasties

Ingredients
  

  • 6 inch piece of baguette see notes for tips on fresh/frozen baguettes
  • 2 tbsp "I Can't Believe It's Not Butter! Light Spread" (or salted butter)
  • 4 tbsp black currant jam (or blackberry jam)
  • 4 thin slices of brie cheese (or swiss)
  • 4 slices of prosciutto

Instructions
 

  • Preheat toaster oven or regular oven to 350°F.
  • Slice the 6 inch piece of baguette into 3/4 inch slices. Make the cuts at a 45° angle when looking at the baguette from the top–this makes the slices longer. Use the triangular baguette ends for something else.
  • Spread butter spread on 1 side of each baguette slice (about 1/2 tablespoon of butter spread). Top with 1 tablespoon of black currant jam.
  • Top each slice with enough brie cheese to cover most of the slice (you can break the brie slices apart to get the desired size). Leave a little room between the brie and the edge, to prevent the cheese from dripping when toasting.
  • Top each slice with half of a prosciutto slice.
  • Place baguette slices on a cookie sheet or tray, and toast in the oven for 4 minutes.
  • Serve immediately. If you like, serve with more black currant jam on the side for dipping.

Notes

  1. I like to buy baguettes, cut them in thirds (6 inch chunks), and freeze them in freezer bags. That way I have baguette whenever I like without worrying about them going moldy.
  2. I like to buy my baguettes at Costco, since they come in pairs and are very fresh. Perfect for freezing.
  3. To thaw a 6 inch baguette piece, I preheat my oven or toaster oven to 200°F, place the baguette on a rac and bake the frozen baguette for 25 minutes.
  4. If I have a fresh baguette that I don’t end up using all of, I remove the baguette from the bag and let it dry in the air in a bowl for a week. Then I grind the baguette into bread crumbs using a rotary grater.
  5. I use “I Can’t Believe It’s Not Butter! Light Spread” because of its low calorie amount. A similar light butter spread is fine, or if you don’t care about the slight increase in calories, real butter is great!
