Berry’s Buttermilk Pancakes

If a cat wants to guarantee that it’s going to be a great day, then that cat should start their day with pancakes. These buttermilk pancakes are what I make when I want to have an extra cute day.

The pancakes’ edges are crispy and brown, they’re voluminous and bready, and they have a delicious buttery flavor. They’re addictive with or without toppings.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 1/2 tablespoons sugar
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/4 cups low fat buttermilk
  • Butter
  • (Optional) Your favorite chocolate chips, or fresh blueberries

Instructions
 

  • Set a large frying pan over medium-low heat, or if using an electric griddle, preheat it to 350°F.
  • In a medium bowl, whisk together 1 cup all-purpose flour, 1 1/2 tablespoons sugar, 1 tsp baking soda, and 1/2 teaspoon salt.
  • Add to the bowl 1 1/4 cups low fat buttermilk and 1 egg. Whisk until flour mixture just disappears. Do not overmix.
  • Take out a 1/4 measuring cup to use as a batter scoop. If your butter is in stick form, peel the paper away from one end, and quickly draw a 4 inch circle on your pan for each spot you'll place pancake batter. A full stick of better works best for this. Otherwise, place a small pat of butter on each spot you'll put a pancake.
  • Immediately after buttering the pan, use your 1/4 cup measuring cup to scoop from your batter bowl so the cup is just over half full. Each pancake will be 2 to 3 tablespoons of batter. Drop the batter onto your pan on one of the spots you buttered. Do this quickly, because the butter will burn if left on the hot pan. If using a frying pan, increase the heat to medium now.
  • (Optional) Sprinkle 5-10 chocolate chips or blueberries onto each pancake. My favorite filling is semi-sweet chocolate chips. If using blueberries, I recommend fresh.
  • Let the pancakes cook for 3-4 minutes, or until the 2nd bubble pops on top. Flip the pancakes and cook for another 2 minutes.
  • Remove pancakes from the pan, and repeat process for the rest of the batter. I like to stack my pancakes on a single plate so they stay warm.
  • Serve immediately. My favorite toppings are fresh berries, pancake syrup, strawberry jam, whipped cream from a spray can, and cracked chunky salt (weird I know but it elevates the flavor!)
